PUMPKIN CHOCOLATE CHIP COOKIES



HERE'S WHAT YOU NEED:

Cookies:

1/2 cup pumpkin puree

1/2 cup chocolate chips (67% cacao)

1 teaspoon vanilla extract

1 tbsp. honey

1/4 coconut oil

1 egg

1 1/2 cup almond meal (@robmills)

1 scoop of vanilla collagen peptides

1/2 teaspoon salt

1 teaspoon baking soda

1/2 teaspoon pumpkin pie spice

dashes of cinnamon

Chocolate Drizzle:

3 tbsp. coconut oil

1 tbsp. honey

1/4 cup chocolate chips (67%)

2 tbsp. cacao powder

HERE'S WHAT YOU'LL DO:

-Combine all the cookie ingredients into a bowl and mix until smooth

-Put bowl in fridge for 1 hour to let the ingredients harden

-Preheat over 350 degrees

-Use your hands to roll into cookie dough balls then place onto your baking sheet lined with parchment paper

-Bake cookies for 12-14 minutes

-Sprinkle sea salt and pour choolate drizzle on cookies once they are out of oven

-Let them cool a bit. You can eat them warm or place in refrigerator (they taste even better the next day after they are cooled off)
