Continuing our SATURDAYS ARE FOR THE BALLS series!
This week we're featuring our Coconut Cashew Date Balls...
WHAT YOU’LL NEED
2 tbsp cold pressed extra virgin Coconut oil/coconut butter
1 cup raw cashews
10 dates dates
1/3 cup coconut flakes
1/3 whole flax seeds
High speed blender/food processor
WHAT YOU’LL DO
Soak dates in warm/hot water until they are super soft.... usually 10-20 minutes. Take the pits out by hand.
While you're waiting, put the cashews in the blender with coconut flakes and blend roughly.
Next, melt the coconut oil/coconut butter and add it to the blender, as well as the pitted dates. Blend.
Lastly, add the sea salt, whole flax seeds, and protein powder [optional]. Don’t be afraid to add a little water as you go to get things moving along.
Empty batter into a bowl and leave it in the fridge for 20 minutes to set.
Once chilled, roll the batter into little balls. Place in fridge for 10 minutes to harden.
To finish, roll balls in coconut flakes. Place in freezer to harden.
