Looking for a dessert idea for guests? Try out our delicious chocolate covered pineapple bites with coconut and sea salt. The contrast between the sweet and salty will fulfill anyone's craving for something "naughty"! AND IT'S SO DANG EASY. LET'S DO THIS.
Fresh ripe pineapple [for the sake of time, we bought the pre-sliced pineapple]
60-100% cacao chips [We used baker's chocolate. More highly suggested brands include: Pascia brand or EatingEvolved chocolate]
Unsweetened coconut shreds [toasted coconut shreds would also be delightful]
WHAT TO DO:
Fill pot with water and put it on stove. Turn onto medium flame.
Meanwhile, place cut up pineapple on pan sheet with parchment paper.
When the pot begins to boil, place glass bowl on top of pot [pick a bowl size that helps it sit it on top]
Fill bowl with cacao chips and turn flame down to low.
Stir as the chocolate begins to melt.
When fully melted, dip the pineapple bites into chocolate.
Decorate with coconut shreds and sea salt.
Place in fridge overnight [or for at least 2 hours]
Serve immediately when take out of fridge!
