Avocado Tartines with Banana & LimeMay 21, 2020
OK, so this just stole my heart. 🥑🍌🍞
The avocado & banana together is surprisingly a KILLER COMBO, and the lime zest & chili flakes takes it over the top. This is going to be my go-to brunch recipe when hosting friends & family.
The recipe is from a Food 52 spotlight on french baker Apollonia Poilane. Apparently her bread recipes are out of this world... so make sure you check her out.
- 2 thick slices sourdough bread
- 1 ripe, medium avocado, halved, pitted, peeled, and coarsely mashed
- 1 medium banana, sliced
- 1 teaspoon finely grated lime zest
- 2 tablespoons fresh lime juice
- Crushed red pepper flakes
- 1 to 2 tablespoons honey
Toast the sourdough so it's nice golden brown. Mash the avocado onto the toasted sides of the bread. Arrange the banana slices on top. Sprinkle with the lime zest, drizzle with the lime juice, and finish with a pinch or two of the pepper flakes. Drizzle with the honey and eat ya heart out.
