High-Protein Sheet Pan Egg Burritos: Postpartum Meal Prep

Between the 3 of us Beyar gals, we collectively have 4 postpartum experiences -- almost 5 soon! We cannot express how INSANELY helpful it is to have a nutrient-dense breakfast prepped for you... especially those longggg nights nursing your newborn. Instead of reaching for coffee first thing for a boost, these burritos help you instantly fuel up for the day.
Ingredients
- Bell pepper, diced
- Onion, diced
- A few handfuls of kale
- 2-3 medium sized yellow potatoes, diced
- 12-14 eggs
- Egg whites (optional)
- olive oil for cooking
- 1 package of ground beef
- 2 cups cottage cheese
- 1 cup shredded cheese
- Salt & pepper
- tortillas (I use "maria and ricardo's" tortillas)
Directions:
- Preheat oven to 350F
- Dice up all the veggies + potatoes.
- Place them on a baking sheet. Salt and pepper everything, drizzle with olive oil, and stir to make sure everything is well coated.
- Put baking sheet in the oven and bake until the potatoes are soft (while it’s baking, mix it around every once in a while).
- Meanwhile, cook the ground beef in a skillet until it’s almost all the way cooked through.
- Place the eggs, cottage cheese, cheese, and salt and pepper in a high speed blender. Blend until smooth.
- Once your veggies and potatoes are ready, evenly distribute the ground beef on top.
- Pour the egg mixture over top evenly as well.
- Bake in the oven for about 20-25 minutes or until firm. Keep checking on it frequently towards the end to make sure you don’t overcook it!
- Once cooked, cut it evenly into long rectangles.
Burrito time!
- Place one tortilla at a time on a flat stove top or a skillet over low heat for 30 seconds (makes them way more malleable to use for the next step).
- Take an egg rectangle and place it towards the edge of the tortilla. Carefully fold in the sides to make a burrito.
- Roll each one up individually in parchment paper.
- Place them all in a freezer safe bag. Make sure you include the date. Throw them in the freezer!
- When you're ready to eat them, take out a couple at a time and place them in your fridge to thaw. Throw a little olive oil on a flat skillet or pan on low heat. Cook the burritto on both sides until the inside is hot and the sides are crispy. Enjoy!
