Instant Pot Chicken & Potato Soup

The frickin' instant pot is a game changer. We made the best chicken soup with little effort. Chicken soup is the perfect meal-prep dish because you end up having 6-8 servings.


  • 4.75lb ButcherBox whole organic chicken
  • 2 tbsp all-purpose Vegeta seasoning
  • 1 bag of Pee Wee Confetti potatoes
  • 1 stalk of celery
  • 2 cups of water

What to do:

  1. Pour 1-2 cups of water into instant pot

  2. Add 1 tbsp of all-purpose seasoning and mix in water

  3. Add chopped veggies [potatoes and celery] *This makes a platform for the chicken which helps it from drying out

  4. Seperately, removing chicken from packaged. Rub the chicken with spices or the other 1 tbsp of Vegeta seasoning

  5. Add chicken to Instant Pot on top of veggies

  6. *We then cooked the chicken on "Slow Cook" for 5 hours. This was not enough! We pressed "Pressure Cook" on high for 12 minutes and then it all came out PERFECTLY cooked and seasoned!

  7. Remove chicken and shred it!

  8. Add the shredded chicken to the broth and veggies.

  9. OPTION- To add rice!
