Look for whole grain or gluten-free versions made with brown rice or legume-based flours for the extra fiber and to help keep your energy more balanced. If you're steering clear of gluten, no worries…there are plenty of GF tortellinis are out there, or you can totally swap in GF ravioli, gnocchi, or any pasta you love.

    Garlic is anti-inflammatory and antimicrobial (hello, postpartum germ shield), and tomatoes bring vitamin C to the table to help absorb all that iron from the sausage. The best kindaaa teamwork.

Carly here (the middle Beyar sister!) The other day, my husband and I were craving tortellini. We asked ChatGPT what tortellini soup recipe we should make based on the ingredients that were left in our fridge. We improvised slightly and created the BEST sausage and veggie tortellini bone broth soup that we wanted to share! This recipe will absolutely be a staple throughout my postpartum chapter and especially during the luteal phase when my cycle returns. Here’s why…

 
 

Ingredients

  • 1 tbsp extra virgin olive oil

  • 1 lb Italian sausage (mild or spicy, your call!) — casings removed if using links

  • 1 small onion, diced

  • 2–3 carrots, sliced

  • 2–3 celery stalks, sliced

  • 3–4 garlic cloves, minced (optional but delicious)

  • 6 cups bone broth (beef or chicken) *you can opt for regular broth!

  • 1 can diced tomatoes (optional, adds depth)

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 1 bag (about 9 oz) cheese tortellini (fresh or frozen)

  • 2 cups fresh spinach or kale (optional)

  • Grated parmesan & chili flakes to serve (optional)

 

Instructions


Instructions:

  1. In a large pot, heat olive oil over medium heat. Add sausage and break it up with a wooden spoon. Cook until browned and cooked through. Use a slotted spoon to remove sausage and set it aside.

  2. In the same pot (leave a little sausage fat for flavor), add onion, carrots, and celery. Cook until softened (5–7 minutes). Stir in garlic and cook another minute.

  3. Add the broth (and diced tomatoes if using), Italian seasoning, salt & pepper. Bring to a boil.

  4. Return cooked sausage to the pot. Add tortellini and simmer until tender (usually 7–10 minutes).

  5. Stir in spinach or kale until wilted, about 2 minutes before serving.

  6. Taste and adjust seasoning. Ladle into bowls, top with grated parmesan and chili flakes if you like a little heat!
