Coconut Milk Chicken Sausage Soup *inspired by @primalgourmet’s Tuscan Sausage Soup..but with our own little twist! *This. is. my. new. go-to.

*I nixed the bacon & Italian sausage and just used organic chicken sausage!
*I used a variety of mini potatoes rather than gold potatoes.
*I used grass-fed beef broth rather than chicken broth!
*I added leftover zucchini we had!
Add 2 tbsp of avocado oil to pot. Then add 1 large yellow onion (chopped). Cook until slightly soft. Add 2 tsp of chili flakes, 4 garlic cloves (chopped), 2 leeks (chopped) and chopped sausage. Stir more until sausage is cooked/browned on both sides. Then add 3-4 cups of broth, 1.5 pounds of potatoes, 1 cup of chopped zucchini and 2 bay leaves to the pot. Bring liquid to boil. Lower the heat to low-medium and cover with lid. You want to cook until the potatoes can stick a fork through (about 15 minutes.) Add 1 head of kale (the leaves/no stem). Let the soup simmer for 5 minutes. Taste for seasoning and adjust with salt and pepper as desired.
